Our chef

Loïc Boëzennec

His first name and surname evoke Brittany, where he is from. He began his culinary apprenticeship there before traveling through France's gastronomic landscape. His journey includes prestigious and Michelin-starred establishments, meaningful encounters, and an enduring passion for warm and indulgent cuisine.

Our chef Loïc worked, among other places, at the Elysée Palace where he served as chef for François Mitterrand.

Now in his radiant fifties, he takes a new direction and puts his chef's hat back on in Candes-Saint-Martin to bring out dishes of immense finesse from his sauces and meats.

Small village but great reputation. This is where the Loire and Vienne rivers meet, where hollyhocks and stone blend together, where a vast collegiate church stands with its small but dedicated restaurant at its feet.
The Auberge de la Route d'O, on the way to Compostela, continues to be an iconic place in the region, offering a warm welcome to visitors and perpetuating the culinary heritage of this stopover. It remains a symbol of French hospitality where both visitors and regulars will find original cuisine accompanied by equally unique bottles.
